Ingredients

1 pound gnocchi (store-bought or homemade)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (15 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon chili flakes (optional)

Salt and pepper to taste

2 cups fresh spinach (or arugula)

8 oz burrata cheese

Fresh basil, for garnish

Grated Parmesan cheese, for serving

Instructions

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions. They are ready when they float to the top, about 2-3 minutes. Drain and set aside.

Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Tomatoes and Cream: Pour the crushed tomatoes into the skillet, stirring to combine with the garlic. Cook for 3-4 minutes until heated through. Then, reduce the heat to low and stir in the heavy cream. Add oregano, chili flakes (if using), and season with salt and pepper to taste. Let it simmer for about 5 minutes, until slightly thickened.

Incorporate the Spinach: Add the fresh spinach to the tomato sauce and stir until wilted, about 2 minutes.

Combine Gnocchi and Sauce: Add the cooked gnocchi to the skillet, gently tossing to coat the gnocchi in the creamy tomato sauce. Cook for an additional 2 minutes to heat everything through.

Finish with Burrata: Remove the skillet from heat. Tear the burrata cheese into pieces and nestle it into the gnocchi mixture. Serve immediately, drizzled with a touch of olive oil, fresh basil leaves, and grated Parmesan cheese to taste.

Enjoy: Serve hot in bowls, allowing guests to mix in the creamy burrata as they eat.
