Ingredients

1 pound beef flank steak or top round, thinly sliced

1/4 cup soy sauce

2 tablespoons Worcestershire sauce

1 tablespoon liquid smoke (optional, for smoky flavor)

2 tablespoons brown sugar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional, for spice)

1/2 teaspoon smoked paprika (optional, for smokiness)

Instructions

Prepare the Beef: Freeze the beef for about 1-2 hours to make it easier to slice thinly. Once firm, use a sharp knife to cut the beef against the grain into thin strips, about 1/8 inch thick.

Make the Marinade: In a bowl, whisk together the soy sauce, Worcestershire sauce, liquid smoke, brown sugar, garlic powder, onion powder, black pepper, crushed red pepper (if using), and smoked paprika.

Marinate the Beef: Place the beef strips in a large zip-top bag or a shallow dish. Pour the marinade over the beef, ensuring all strips are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 4 hours, preferably overnight for maximum flavor.

Preheat the Air Fryer: Preheat your air fryer to 160°F (70°C). If your air fryer doesn't go this low, set it to the lowest setting and keep an eye on the beef.

Arrange the Beef: Remove the beef from the marinade and pat it dry with paper towels to remove excess liquid. Place the strips in a single layer in the air fryer basket, making sure not to overcrowd them.

Air Fry the Jerky: Cook the beef jerky for 4-6 hours, flipping the strips every hour for even drying. The jerky is done when it is dry and leathery but still slightly pliable. Keep an eye on it to avoid overcooking, as the cooking time varies by thickness and air fryer model.

Cool and Store: Once done, let the jerky cool completely. Store in an airtight container in the pantry for up to 2 weeks or in the refrigerator for up to a month.
