2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (Panko recommended for extra crunch)

1 tsp garlic powder

1 tsp onion powder

1 tsp dried oregano

1/2 tsp salt (adjust to taste)

1/4 tsp black pepper

2 large eggs

Olive oil spray for crisping

Prepare the Zucchini: Wash and dry the zucchinis. Slice them into thin rounds, approximately 1/4 inch thick. Uniform thickness ensures even cooking.

    Set Up the Breading Station: In one bowl, whisk the eggs until well beaten. In a second bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and pepper, mixing well.

      Bread the Zucchini Chips: Dip each zucchini slice first into the beaten eggs, ensuring it's well-coated. Then, dredge it in the breadcrumb mixture, pressing slightly to help the coating adhere.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

          Air Fry the Chips: Arrange the breaded zucchini slices in a single layer in the air fryer basket. You may need to do this in batches depending on the size of your air fryer. Spray the tops lightly with olive oil spray for extra crispiness.

            Cook: Air fry the zucchini chips for 10-12 minutes, flipping halfway through until they are golden brown and crispy. Adjust the cooking time based on your desired level of crispiness, keeping a close eye towards the end.

              Serve: Once done, carefully remove the zucchini chips from the air fryer and let them cool for a few minutes. Serve them warm, optionally with marinara sauce or ranch dressing for dipping.
