Air Fryer Spinach Feta Egg Rolls

1 cup fresh spinach, chopped

1 cup crumbled feta cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon lemon juice

1/2 teaspoon black pepper

1/4 teaspoon salt

10 egg roll wrappers

Sauté the Vegetables: In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent, about 3-4 minutes. Next, add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.

    Mix the Filling: In a large bowl, combine the sautéed spinach mixture with crumbled feta cheese, lemon juice, black pepper, and salt. Mix well until all ingredients are evenly distributed.

      Prepare the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about 2 tablespoons of the spinach-feta mixture onto the center of the wrapper. Fold the bottom corner over the filling, tuck in the sides, and roll tightly to seal. Repeat with the remaining wrappers and filling.

        Preheat Air Fryer: Preheat your air fryer to 375°F (190°C).

          Air Fry the Egg Rolls: Lightly spray the egg rolls all over with cooking spray. Place in a single layer in the air fryer basket (you may need to do this in batches). Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.

            Serve: Once cooked, remove the egg rolls from the air fryer and let them cool slightly before serving. Enjoy them warm with your favorite dipping sauce!
