2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional, for heat)

2 tablespoons cornstarch (for extra crispiness)

Fresh parsley (for garnish, optional)

Prep the Sweet Potatoes: Start by washing and peeling the sweet potatoes. Cut them into uniform strips, about 1/4 inch thick, for even cooking.

    Soak the Fries: Soak the sweet potato strips in cold water for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

      Season the Fries: After soaking, drain and pat the sweet potatoes dry with a paper towel. In a large mixing bowl, combine the sweet potato strips with olive oil, paprika, garlic powder, salt, black pepper, cayenne pepper (if using), and cornstarch. Toss until the sweet potatoes are well-coated.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Air Fry the Fries: Place the seasoned sweet potato fries in the air fryer basket in a single layer. You may need to cook them in batches to avoid overcrowding. Air fry for 15-20 minutes, shaking the basket halfway through to ensure even cooking. Cook until the fries are golden brown and crispy.

            Garnish and Serve: Once done, remove the fries from the basket and let them cool slightly. Garnish with fresh parsley if desired, and serve hot with your favorite dipping sauce.
