Ingredients

2 cups unsweetened applesauce

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

3 large eggs

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground allspice

1/4 teaspoon salt

1 cup chopped walnuts or pecans (optional)

1/2 cup raisins (optional)

Powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, combine the applesauce, granulated sugar, brown sugar, and vegetable oil. Whisk until well combined and smooth. Add the eggs one at a time, mixing well after each addition.

Combine Dry Ingredients: In a separate bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, allspice, and salt. This helps ensure that the spices and leavening agents are evenly distributed.

Combine Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Do not overmix.

Add Nuts and Raisins: If using, fold in the chopped walnuts or pecans and raisins into the batter for added texture and flavor.

Pour into Pan: Pour the batter into the prepared baking pan, smoothing the top with a spatula.

Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.

Cool: Remove from the oven and let the cake cool in the pan for about 15 minutes. Then transfer it to a wire rack to cool completely.

Serve: Once cooled, dust the top with powdered sugar before slicing. Enjoy a piece of this flavorful Amish Applesauce Cake, perfect for dessert or an afternoon treat!
