2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

3 cups peeled, cored, and diced apples (about 3 medium apples)

1/2 cup chopped walnuts (optional)

For the Butterscotch Sauce:

1/2 cup unsalted butter

1 cup brown sugar, packed

1/2 cup heavy cream

1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.

    Prepare the Apple Cake:

      - In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.

        - In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.

          - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

            - Gradually mix in the dry ingredients until just combined. Be careful not to overmix.

              - Fold in the diced apples and walnuts (if using) until evenly distributed.

                - Pour the batter into the prepared baking pan and spread it evenly.

                  Bake the Cake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.

                    Make the Butterscotch Sauce:

                      - In a medium saucepan over medium heat, melt the butter.
