2 ½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

1 cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

1 large egg

2 teaspoons pure vanilla extract

½ cup apple cider (preferably fresh)

1 cup chopped dried apples (or apple bits)

Optional: 1 cup walnuts or pecans, chopped

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

    Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, using an electric mixer, cream the softened butter, brown sugar, and granulated sugar together on medium speed until light and fluffy, about 2-3 minutes.

        Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

          Incorporate Apple Cider: Gradually add the apple cider to the butter mixture and mix until smooth.

            Combine Mixtures: Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined. Be careful not to overmix.

              Fold in Add-ins: Gently fold in the chopped dried apples and walnuts or pecans if using.

                Shape Cookies: Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

                  Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden, and the centers appear soft. They will continue to set as they cool.

                    Cool and Enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
