Apple Cinnamon Breakfast Quesadillas

2 large flour tortillas

2 medium apples (preferably Granny Smith or Fuji), peeled and diced

1 teaspoon lemon juice

1 teaspoon ground cinnamon

2 tablespoons brown sugar (adjust to taste)

1 cup shredded mozzarella cheese (or your favorite melty cheese)

2 tablespoons butter

Maple syrup for drizzling (optional)

Whipped cream for serving (optional)

Instructions
 

Prepare the Apples: In a medium bowl, toss the diced apples with lemon juice, ground cinnamon, and brown sugar until well combined. This will not only add flavor but will also prevent the apples from browning.

    Cook the Apples: In a skillet over medium heat, melt 1 tablespoon of butter. Add the apple mixture and cook, stirring occasionally, for about 5-7 minutes or until the apples are tender and caramelized. Remove from heat and set aside.

      Assemble the Quesadillas: Place one tortilla in the skillet over medium heat. Sprinkle half of the shredded cheese evenly over the tortilla, followed by the cooked apple mixture, and top with the remaining cheese. Finally, place the second tortilla on top to create a stacked quesadilla.

        Cook the Quesadilla: Add the remaining tablespoon of butter around the edges of the quesadilla (optional for extra crispiness). Cook for about 3-4 minutes, or until the bottom is golden brown and the cheese has started to melt. Carefully flip the quesadilla using a spatula, and cook on the other side for another 3-4 minutes until golden brown and crispy.
