2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, melted and cooled

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk (or milk with 1 tablespoon vinegar)

2 cups peeled and diced apples (about 2 medium apples)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup brown sugar for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

      Combine Wet Ingredients: In a separate medium bowl, beat together the melted butter, eggs, vanilla extract, and buttermilk until smooth and well blended.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined. It’s okay if there are a few lumps; do not overmix.

          Fold in Apples and Nuts: Gently fold in the diced apples and chopped nuts (if using). The batter will be thick.

            Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full.

              Sprinkle Topping: In a small bowl, mix the brown sugar with a dash of cinnamon. Sprinkle this mixture evenly on top of the muffin batter in each cup.

                Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
