4 large flour tortillas

2 medium apples (preferably Granny Smith), peeled, cored, and thinly sliced

1 cup brown sugar

2 teaspoons ground cinnamon

1 teaspoon vanilla extract

4 tablespoons unsalted butter, melted

½ cup pecans or walnuts, chopped (optional)

1 cup powdered sugar

2 tablespoons milk

1 tablespoon lemon juice

Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.

    Prepare the Apple Mixture: In a large mixing bowl, combine the sliced apples, brown sugar, cinnamon, vanilla extract, and lemon juice. Toss until the apples are well coated.

      Fill the Tortillas: Lay out one tortilla on a clean surface. Brush one side of the tortilla with melted butter, then spoon a generous amount of the apple mixture onto the center of the tortilla. If using, sprinkle some chopped pecans or walnuts on top of the apples.

        Roll it Up: Carefully roll the tortilla tightly, starting from the side with the apple mixture. Place the rolled tortilla seam-side down on the prepared baking sheet. Repeat for the remaining tortillas and filling.

          Brush and Bake: Once all the roll-ups are on the baking sheet, brush the tops with any remaining melted butter. Bake for 15-18 minutes or until the roll-ups are golden brown and the apples are tender.

            Prepare the Glaze: While the roll-ups are baking, whisk together the powdered sugar and milk in a small bowl until smooth to create a glaze. Adjust the consistency with more milk or powdered sugar as needed.
