Ingredients

2 cups Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 large apple, cored and diced (preferably a crisp variety like Honeycrisp or Fuji)

1/4 cup chopped nuts (walnuts or pecans work well)

1/4 cup dried cranberries or raisins

A pinch of salt

Instructions

Prepare the Yogurt Mixture: In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, ground cinnamon, and a pinch of salt. Stir until all the ingredients are well mixed and creamy.

Add Apple and Toppings: Gently fold in the diced apple, chopped nuts, and dried cranberries (or raisins) until evenly distributed throughout the yogurt mixture.

Spread on Baking Sheet: Line a baking sheet (approximately 11x17 inches) with parchment paper. Pour the yogurt mixture onto the sheet, spreading it out evenly to about 1/2 inch thick.

Freeze: Place the baking sheet in the freezer for about 4-6 hours, or until the yogurt is completely frozen solid.

Break into Pieces: Once frozen, remove the yogurt bark from the freezer and let it sit at room temperature for about 5 minutes to soften slightly. Then, using your hands or a knife, break it into irregular pieces.

Serve or Store: Enjoy immediately for a refreshing snack, or store the yogurt bark pieces in an airtight container in the freezer for up to 2 weeks.
