For the base:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1 cup sour cream

1 tsp cinnamon

1 cup apples, peeled, cored, and diced

1 tbsp lemon juice

For the apple crisp topping:

1 cup rolled oats

½ cup brown sugar, packed

½ cup all-purpose flour

½ tsp cinnamon

½ cup unsalted butter, softened and cubed

1 cup chopped walnuts (optional)

Instructions
 

Prepare the crust:

    - Preheat your oven to 325°F (160°C).

      - In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and crumbly.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.

              - Gradually add in the sugar and vanilla extract, continuing to mix well.

                - Add the eggs one at a time, mixing well after each addition.

                  - Stir in the sour cream, cinnamon, diced apples, and lemon juice until evenly distributed.

                    Assemble the cheesecake:

                      - Pour the cheesecake filling over the cooled graham cracker crust, spreading it out evenly.

                        - Bake in the preheated oven for 45-50 minutes or until the edges are set but the center is slightly jiggly.

                          Prepare the apple crisp topping:

                            - While the cheesecake is baking, mix together the rolled oats, brown sugar, flour, cinnamon, and cubed butter in a bowl until crumbly. If using, add chopped walnuts for extra crunch.
