3 cups diced fresh apples (peeled and cored)

2 cups all-purpose flour

1 ½ cups granulated sugar

1 tsp baking soda

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp salt

1 cup vegetable oil

4 large eggs

1 tsp vanilla extract

1 cup chopped walnuts or pecans (optional)

½ cup brown sugar (for topping)

1 tsp ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C). Grease and flour a 9x13 inch baking dish or a bundt pan.

    Prepare Apples: In a medium bowl, toss the diced apples with a sprinkle of cinnamon and set aside to let them juice a little, enhancing their flavor.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking soda, ground cinnamon, nutmeg, and salt until well combined.

        Mix Wet Ingredients: In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract until smoothly blended.

          Combine Mixtures: Pour the wet mixture into the dry ingredients, mixing until just combined.

            Add Apples and Nuts: Fold in the diced apples and chopped nuts (if using) until evenly distributed throughout the batter.

              Transfer to Pan: Pour the batter into the prepared baking dish, spreading it evenly.

                Prepare Topping: In a small bowl, combine the brown sugar and cinnamon. Sprinkle the mixture over the batter in the pan.

                  Bake: Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. If using a bundt pan, it may take slightly longer.

                    Cool & Serve: Let the cake cool in the pan for about 15 minutes before inverting it onto a wire rack to cool completely. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.
