10 cloves of garlic, peeled and crushed

4 cups chicken or vegetable broth

1 medium onion, finely chopped

2 tablespoons unsalted butter

1 tablespoon olive oil

2 cups stale French bread, cubed

1 cup heavy cream

4 large eggs

Salt and freshly ground black pepper, to taste

Fresh thyme leaves, for garnish

Grated Gruyère cheese, for serving

Lemon wedges, for serving

Instructions
 

Sauté the Garlic and Onion: In a large pot, heat the butter and olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the crushed garlic and cook for another 2-3 minutes until fragrant but not browned.

    Simmer the Broth: Pour in the chicken or vegetable broth and bring it to a gentle simmer. Let it cook for about 10 minutes to let the flavors meld together.

      Add the Bread: Stir in the cubed stale French bread and continue to simmer for an additional 10 minutes until the bread has soaked and softened.

        Blend the Soup: Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a stand blender. Return the blended soup to the pot.

          Incorporate the Cream: Add the heavy cream to the soup, stirring well to combine. Allow it to heat gently (do not boil) for about 5 minutes. Season with salt and black pepper to taste.

            Prepare the Poached Eggs: In a separate pot, bring water to a simmer. Carefully crack each egg into a small bowl, then gently slide it into the simmering water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside.

              Serve the Soup: Ladle the garlic soup into bowls. Top with a poached egg, a sprinkle of fresh thyme, and a generous amount of grated Gruyère cheese. Serve with lemon wedges on the side for a refreshing twist.
