1 lb Italian sausage (spicy or mild, based on preference)

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 large potato, thinly sliced (Yukon Gold or Russet)

1 cup kale, stems removed and chopped

1 cup heavy cream

1 tsp red pepper flakes (adjust for spice)

Salt and pepper to taste

Olive oil (for sautéing)

Parmesan cheese (for serving, optional)

Cook the Sausage: In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a wooden spoon as it cooks (about 5-7 minutes). Remove the cooked sausage and set aside, leaving the drippings in the pot.

    Sauté the Vegetables: In the same pot, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for 1 minute until fragrant.

      Add Broth and Potatoes: Pour in the chicken broth and bring to a simmer. Add the thinly sliced potatoes and a pinch of salt and pepper. Let it simmer for about 10-15 minutes, or until the potatoes are tender.

        Mix in the Sausage and Kale: Return the cooked sausage to the pot. Stir in the chopped kale and red pepper flakes. Continue to simmer for an additional 5 minutes until the kale is wilted.
