4 large eggs

1 ripe avocado

2 tablespoons plain Greek yogurt

1 teaspoon Dijon mustard

1 tablespoon fresh lemon juice

2 tablespoons chopped red onion

1 tablespoon chopped fresh chives (or green onions)

Salt and pepper to taste

Optional: a pinch of paprika for garnish

Optional: lettuce leaves or whole grain bread for serving

Boil the Eggs: Place the eggs in a saucepan and cover them completely with cold water. Bring to a boil over medium heat. Once boiling, cover and remove from heat. Let the eggs sit for 10-12 minutes, then transfer them to an ice bath for 5 minutes.
