1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

1 teaspoon vanilla extract

2 ripe avocados, peeled and pitted

8 oz cream cheese, softened

1 cup granulated sugar

½ cup sour cream

1/4 cup fresh lime juice

Zest of 2 limes

1 teaspoon vanilla extract

3 large eggs

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C).

    Make the Crust: In a medium bowl, mix together the graham cracker crumbs, granulated sugar, melted butter, and vanilla extract until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake the crust in the preheated oven for 10 minutes, then remove it and let it cool while you prepare the filling.

      Prepare the Filling: In a food processor, combine the ripe avocados, cream cheese, granulated sugar, sour cream, fresh lime juice, lime zest, and vanilla extract. Blend until smooth and creamy, scraping down the sides as necessary to ensure a uniform mixture.

        Add Eggs: With the food processor running, add in the eggs one at a time, blending just until incorporated. Be careful not to overmix.

          Bake the Cheesecake: Pour the avocado filling over the cooled crust in the springform pan. Bake in the preheated oven for 45 to 50 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for an additional hour.

            Chill: Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate it for at least 4 hours, preferably overnight, to help it set and enhance the flavors.
