1 cup rolled oats

½ cup brown sugar, packed

½ cup granulated sugar

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ cup unsweetened applesauce

½ cup milk (any variety: dairy or non-dairy)

1 large egg

1 tsp vanilla extract

½ cup mini chocolate chips

½ cup diced apples (with skin for added texture, about 1 medium apple)

Optional: ¼ cup chopped walnuts or pecans for extra crunch

Instructions
 

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

    In a large mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk together until well-mixed.

      In a separate bowl, whisk together the applesauce, milk, egg, and vanilla extract until fully combined.

        Pour the wet ingredients into the dry mixture and gently fold with a spatula until just combined. Be careful not to overmix; a few lumps are okay.

          Fold in the mini chocolate chips, diced apples, and optional nuts if using.

            Divide the batter evenly among the muffin cups, filling each about ¾ full.

              Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Once done, remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
