Ingredients

12 fresh jalapeño peppers

8 oz cream cheese, softened

1 cup sharp cheddar cheese, shredded

1/2 cup cooked bacon, chopped (about 6 slices)

1/4 cup green onions, chopped

1 tsp garlic powder

1 tsp onion powder

1/4 tsp smoked paprika

Salt and pepper, to taste

1 cup breadcrumbs (optional for a crispy topping)

Olive oil (for drizzling)

Instructions

Prepare the Jalapeños: Preheat your oven to 400°F (200°C). Cut the jalapeños in half lengthwise and remove the seeds and membranes (use gloves for handling). Set aside.

Make the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped bacon, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all the ingredients are fully incorporated.

Stuff the Peppers: Using a spoon or a piping bag, generously fill each jalapeño half with the cheese and bacon mixture. Make sure to pack the filling tightly.

Optional Breadcrumb Topping: If you'd like a crispy topping, sprinkle breadcrumbs evenly over the filled jalapeños. Drizzle a little olive oil on top for added crispiness.

Bake the Poppers: Arrange the jalapeño poppers on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until the jalapeños are tender and the filling is bubbly and golden.

Cool and Serve: Remove the poppers from the oven and let them cool for a few minutes before serving. Enjoy them warm with your favorite dipping sauce, like ranch or blue cheese dressing!
