4 everything bagels, cubed

8 large eggs

2 cups milk (or dairy alternative)

1 cup shredded sharp cheddar cheese

1 cup cooked and crumbled breakfast sausage (or vegetarian alternative)

1 cup diced bell peppers (red and green)

1 small onion, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with non-stick spray or butter.

    Prepare Bagels: In a large mixing bowl, combine the cubed bagels with the cooked sausage, diced bell peppers, and chopped onion. Toss gently to ensure even distribution.

      Make the Egg Mixture: In another bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper until well combined.

        Combine Ingredients: Pour the egg mixture over the bagel mixture in the baking dish. Gently stir to ensure the bagel cubes are well-coated with the egg mixture.

          Cheese It Up: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and continue baking for another 15-20 minutes, or until the top is golden brown and the center is set.

              Cool and Serve: Once done, remove from the oven and let cool for about 10 minutes. Garnish with fresh chives or parsley if desired. Cut into squares and serve warm.
