Baked Apple Cider Donuts

1 cup apple cider

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

½ cup granulated sugar

½ cup brown sugar, packed

2 large eggs

¼ cup unsalted butter, melted

½ cup buttermilk (or milk + 1 tablespoon vinegar)

1 teaspoon vanilla extract

Cinnamon sugar for coating (½ cup granulated sugar mixed with 1 tablespoon ground cinnamon)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a donut pan thoroughly with cooking spray or melted butter.

    Reduce Cider: In a small saucepan, bring the apple cider to a boil over medium heat. Once boiling, reduce the heat and let it simmer for about 10-15 minutes, or until the volume is reduced to ½ cup. Let it cool slightly.

      Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until well combined. Set aside.

        Mix Wet Ingredients: In another bowl, combine the granulated sugar, brown sugar, and eggs. Whisk until the mixture is smooth. Add the melted butter, buttermilk, vanilla extract, and reduced apple cider, whisking until fully integrated.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.

            Fill Donut Pan: Use a piping bag or a zip-top bag with the corner snipped off to fill each donut cavity about ¾ full with batter.

              Bake: Place the donut pan in the preheated oven and bake for 12-15 minutes, or until a toothpick inserted into the center of a donut comes out clean.

                Cool and Coat: Allow the donuts to cool in the pan for about 5 minutes, then gently remove them and place them on a wire rack to cool completely. Once cooled, coat the top of each donut in cinnamon sugar.

                  Serve: Enjoy them warm or at room temperature with a cup of coffee or cider!
