Ingredients

2 large apples (preferably Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/2 cup rolled oats

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 large egg

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar)

1 teaspoon vanilla extract

1/4 cup unsalted butter, melted

1/2 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Apple Mixture: In a medium bowl, toss the diced apples with a tablespoon of granulated sugar and a sprinkle of cinnamon. Set aside to let them soften.

Mix Dry Ingredients: In a large bowl, whisk together the flour, rolled oats, baking powder, baking soda, ground cinnamon, nutmeg, and salt until everything is well combined.

Combine Wet Ingredients: In another bowl, beat together the egg, granulated sugar, brown sugar, buttermilk, vanilla extract, and melted butter. Mix until smooth and combined.

Combine Mixtures: Pour the wet mixture into the dry mixture, stirring until just combined. Gently fold in the apple mixture, being careful not to overmix.

Shape the Fritters: Using a spoon or cookie scoop, drop rounded tablespoons of the batter onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly to create fritter shapes.

Bake: Bake in the preheated oven for 15-20 minutes, or until the fritters are golden brown and a toothpick inserted comes out clean.

Prepare the Glaze: While the fritters are baking, prepare the glaze by whisking together the powdered sugar and milk in a small bowl until smooth. Adjust consistency as desired by adding more milk or powdered sugar.

Glaze the Fritters: Once the fritters are out of the oven and slightly cooled, drizzle or dip them in the glaze for a sweet finish.

Serve: Enjoy your delicious baked apple fritters warm or at room temperature, and store any leftovers in an airtight container.
