2 large apples, peeled and diced

1 cup all-purpose flour

1/2 cup sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup buttermilk (or milk + 1/2 tbsp lemon juice)

1 large egg

1 teaspoon vanilla extract

1/4 cup melted butter

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix until well blended.

      In another bowl, whisk together the buttermilk, egg, vanilla extract, and melted butter until smooth.

        Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.

          Gently fold in the diced apples until evenly distributed in the batter.

            Using a spoon or ice cream scoop, drop spoonfuls of batter onto the prepared baking sheet, leaving space between each fritter.

              Bake in the preheated oven for 15-20 minutes, or until the fritters are golden brown and a toothpick inserted in the center comes out clean.

                While the fritters are baking, prepare the glaze by mixing the powdered sugar and milk together in a small bowl until smooth.

                  Once the fritters are baked and slightly cooled, drizzle the glaze over the top of each fritter.
