Ingredients
  

1 (8 oz) wheel of Brie cheese

1/2 cup pecans, chopped

1/4 cup honey

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)

1 tablespoon unsalted butter, melted

1/2 teaspoon vanilla extract

Salt and pepper to taste

1 package of puff pastry (thawed, optional)

Fresh fruit (e.g. apple slices, grapes) and crackers for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Brie: If using puff pastry, roll out the pastry on a lightly floured surface. Place the Brie in the center of the pastry, if using, or directly on a baking dish lined with parchment paper.

      Mix the Topping: In a small bowl, combine the chopped pecans, honey, melted butter, vanilla extract, rosemary, and a pinch of salt and pepper. Mix until well combined.

        Assemble the Dish: Spoon the pecan and honey mixture over the Brie, ensuring it’s well-coated. If using puff pastry, fold the edges over the Brie, sealing it completely (you can cut off any excess pastry).

          Bake: Place the Brie (either wrapped in pastry or unwrapped) on a baking sheet. Bake for about 15-20 minutes, or until the Brie is soft and gooey. If using pastry, bake until golden brown.

            Cool and Serve: Remove from the oven and let it cool for a few minutes before serving. Drizzle with additional honey if desired, and serve with fresh fruit slices and an assortment of crackers.
