Ingredients

4 cod fillets (about 6 ounces each)

4 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 lemons

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon slices (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease with cooking spray.

Prepare the Marinade: In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and black pepper. Whisk until well mixed to create a marinade.

Marinate the Cod: Place the cod fillets in the prepared baking dish. Pour the marinade evenly over the fish, ensuring all pieces are well-coated. For best flavor, let the cod marinate for about 15-30 minutes at room temperature.

Bake the Fish: Once marinated, transfer the dish to the preheated oven. Bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork. Cooking time may vary slightly depending on the thickness of your fillets.

Garnish and Serve: Once done, remove the baking dish from the oven and let it sit for a couple of minutes. Garnish with freshly chopped parsley and serve with lemon slices on the side for an extra zing.

Enjoy!: Pair your lemon-garlic baked cod with a side of roasted vegetables or a fresh salad for a light and flavorful meal!
