Ingredients

1 block (200g) of feta cheese

4 large eggs

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Fresh basil or parsley, for garnish

Crusty bread, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Baking Dish: In a medium-sized baking dish (around 8x8 inches), add the block of feta cheese in the center. Arrange the halved cherry tomatoes around the feta.

Season the Ingredients: Drizzle the olive oil over the feta and tomatoes. Sprinkle the dried oregano, red pepper flakes (if using), and a pinch of salt and pepper over everything.

Bake the Feta and Tomatoes: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the feta is soft and slightly golden, and the tomatoes are blistered.

Add the Eggs: Remove the dish from the oven. Using a spoon, create small wells in the feta and tomato mixture, then crack an egg into each well.

Bake Again: Return the dish to the oven and bake for an additional 10-12 minutes, or until the egg whites are set but the yolks remain slightly runny (or cooked to your liking).

Serve: Carefully remove the dish from the oven. Garnish with fresh basil or parsley. Serve hot with crusty bread for dipping!
