Ingredients

200g (7 oz) feta cheese (block)

400g (14 oz) uncooked pasta (penne or fusilli work well)

2 cups cherry tomatoes (halved)

1 red bell pepper (diced)

4 cloves garlic (minced)

1/4 cup olive oil

1 tablespoon dried oregano

1 teaspoon red chili flakes (adjust to taste)

Salt and pepper to taste

1/2 cup fresh basil leaves (roughly chopped)

1/4 cup grated Parmesan cheese (optional for extra flavor)

Zest of 1 lemon (for added brightness)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Vegetables: In a large baking dish, combine the halved cherry tomatoes, diced red bell pepper, and minced garlic. Drizzle with olive oil, and season with oregano, red chili flakes, salt, and pepper. Toss to combine.

Add the Feta: Place the block of feta cheese in the center of the vegetable mixture. Drizzle a little olive oil over the feta and sprinkle with extra oregano for added flavor.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, until the vegetables are roasted and the feta is golden and softened.

Cook the Pasta: While the feta and vegetables are baking, cook the pasta according to package instructions in salted boiling water until al dente. Reserve about 1 cup of pasta water before draining.

Combine: Once baked, remove the dish from the oven. Use a fork to mash the feta into the roasted vegetables, creating a creamy sauce. Mix in the cooked pasta, adding a splash of reserved pasta water as necessary to reach desired creaminess.

Finish Off: Add the fresh basil and lemon zest. Optionally, sprinkle with grated Parmesan for an extra cheesy flavor. Toss everything to ensure even coating.

Serve: Divide the pasta among plates and top with additional basil or chili flakes if desired. Serve warm and enjoy your creamy baked feta pasta!
