Baked Feta Pasta

200g (7 oz) feta cheese

300g (10.5 oz) cherry tomatoes, halved

3 cloves garlic, minced

1/4 cup extra virgin olive oil

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

250g (9 oz) pasta of your choice (penne or fusilli work well)

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Zest of 1 lemon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper to prevent sticking.

    Prepare the Baking Dish: In the center of the baking dish, place the feta cheese block, surrounded by the halved cherry tomatoes. Add the minced garlic around the dish.

      Season the Ingredients: Drizzle the extra virgin olive oil over the feta and tomatoes. Sprinkle red pepper flakes, salt, and black pepper on top. Give the cherry tomatoes a gentle toss to coat them in the oil and seasonings.

        Bake: Place the baking dish in the preheated oven and bake for approximately 30 minutes, or until the feta is golden and soft, and the tomatoes have burst and released their juices.

          Cook the Pasta: While the feta and tomatoes bake, bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta.

            Combine Everything: Once the feta and tomatoes are done baking, carefully remove the dish from the oven. Use a fork to mash the feta and tomatoes together, creating a creamy sauce. If the mixture is too thick, gradually add some reserved pasta water until you reach the desired consistency.

              Mix with Pasta: Add the drained pasta to the baking dish. Toss everything together until the pasta is well coated with the feta-tomato sauce.

                Garnish and Serve: Serve immediately, garnished with fresh basil leaves, a sprinkle of grated Parmesan cheese, and a zest of lemon for added brightness, if desired.
