Ingredients

4 medium-sized russet potatoes

1/4 cup olive oil

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Optional: Fresh lemon wedges (for serving)

Instructions

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Wash and scrub the potatoes thoroughly. Cut each potato into wedges; aim for roughly 8 wedges per potato for even cooking.

In a large bowl, combine the olive oil, minced garlic, Italian seasoning, smoked paprika, salt, and black pepper. Mix well to create a flavorful oil mixture.

Add the potato wedges to the bowl, tossing them gently in the garlic-oil mixture until they are fully coated.

Spread the potato wedges in a single layer on the prepared baking sheet. Ensure that they are not crowded to allow for proper crisping.

Bake in the preheated oven for 25 minutes. After 25 minutes, remove the baking sheet and sprinkle the grated Parmesan cheese evenly over the wedges.

Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the wedges are golden brown and crispy.

Once done, take them out of the oven and let them cool for a couple of minutes. Garnish with fresh parsley and serve hot with optional lemon wedges on the side for a zesty kick.
