Ingredients

4 cod fillets (approximately 6 oz each)

2 tablespoons olive oil

Juice of 1 large lemon

Zest of 1 lemon

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 teaspoon paprika

Salt and pepper, to taste

Lemon slices, for garnish

Fresh dill sprigs, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper for easy cleanup.

Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, fresh dill, paprika, salt, and pepper until well combined.

Marinate the Cod: Place the cod fillets in the prepared baking dish. Pour the lemon-dill marinade over the fillets, ensuring they are well coated. Let them marinate for about 15-20 minutes to absorb the flavors.

Bake the Cod: Place the baking dish in the preheated oven and bake for 12-15 minutes, or until the cod flakes easily with a fork and is opaque. The cooking time may vary slightly depending on the thickness of the fillets.

Garnish and Serve: Once cooked, remove the cod from the oven and let it rest for a couple of minutes. Serve with lemon slices and fresh dill sprigs for garnish. This dish pairs perfectly with steamed vegetables or a light salad.
