Baked Zucchini Chicken Parmesan

2 medium zucchinis, sliced into 1/4-inch rounds

1 lb boneless, skinless chicken breasts, cut into thin slices

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup breadcrumbs (preferably whole wheat)

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil spray

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: In a bowl, season the chicken slices with salt, pepper, garlic powder, onion powder, and Italian seasoning. Mix until well coated.

      Coat the Chicken: Place the breadcrumbs in a shallow dish. Dredge each piece of chicken in the breadcrumbs, pressing lightly to ensure they adhere well.

        Sauté the Zucchini: In a non-stick skillet over medium heat, add a light spray of olive oil. Sauté the zucchini rounds for about 3-4 minutes until just tender but not fully cooked. Remove from heat and set aside.

          Layer the Ingredients: In a baking dish, spread a thin layer of marinara sauce at the bottom. Arrange a layer of the breaded chicken slices over the sauce. Top the chicken with half of the sautéed zucchini, followed by half of the marinara sauce and half of the mozzarella cheese.

            Finish Layering: Repeat the layering with the remaining chicken, zucchini, sauce, and top with the remaining mozzarella. Finish with a sprinkle of grated Parmesan cheese and dried oregano.

              Bake the Dish: Cover the baking dish with aluminum foil (to prevent excessive browning) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the chicken is cooked through, and the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven, let it sit for a few minutes, then garnish with fresh basil leaves before serving.
