Ingredients

2 medium zucchini

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

1/4 cup grated Parmesan cheese (optional for added flavor)

Fresh herbs for garnish (such as parsley or dill)

Instructions

Preheat the Oven: Preheat your oven to 225°F (110°C). This low temperature will help the zucchini chips crisp without burning.

Prepare the Zucchini: Wash the zucchini and slice it into thin rounds, about 1/8 inch thick. You can use a mandoline for consistent thickness or a sharp knife.

Arrange on Baking Sheet: Lay the zucchini slices on a baking sheet lined with parchment paper, ensuring they don’t overlap. This helps them crisp up evenly.

Season the Chips: In a mixing bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Drizzle the oil mixture over the zucchini slices, tossing gently to coat.

Optional Cheese Topping: If you want to add some cheesy flavor, sprinkle the grated Parmesan cheese over the top of the zucchini slices.

Bake: Place the baking sheet in the preheated oven and bake for about 2 hours, flipping the chips halfway through. Keep an eye on them towards the end to avoid burning.

Cool and Serve: Once they are crispy and golden, remove them from the oven and let them cool for a few minutes. Garnish with freshly chopped herbs if desired.

Enjoy: Serve the zucchini chips as a healthy snack on their own or with a dip like hummus or ranch dressing!
