Ingredients

1 lb Brussels sprouts, trimmed and halved

2 tablespoons olive oil

Salt and freshly cracked black pepper to taste

1/4 cup balsamic vinegar

2 tablespoons honey or maple syrup

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven: Start by preheating your oven to 425°F (220°C) to prepare for roasting the Brussels sprouts.

Prepare the Brussels sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until well-coated.

Roast the sprouts: Spread the Brussels sprouts in a single layer on a baking sheet. Roast them in the preheated oven for about 20-25 minutes, or until they're golden brown and crispy on the outside, tossing halfway through for even cooking.

Make the glaze: While the Brussels sprouts are roasting, prepare the balsamic glaze. In a small saucepan over medium heat, combine the balsamic vinegar, honey (or maple syrup), minced garlic, and red pepper flakes, if using. Bring to a gentle simmer and let it cook for about 5-7 minutes, or until it thickens slightly.

Glaze the Brussels sprouts: Once the Brussels sprouts are done roasting, transfer them back to the large bowl and drench them with the balsamic glaze, tossing gently to ensure they are well-coated.

Add cheese (optional): If desired, sprinkle the grated Parmesan cheese over the glazed Brussels sprouts for an added layer of flavor. Toss lightly to incorporate.

Garnish and serve: Transfer the glazed Brussels sprouts to a serving platter, garnish with fresh chopped parsley, and serve hot as a delightful side dish!
