2 ripe bananas, mashed

1 cup all-purpose flour

1/2 cup whole wheat flour

1/4 cup brown sugar (packed)

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

2 large eggs

1/2 cup milk (dairy or plant-based)

1/4 cup vegetable oil or melted coconut oil

1 tsp vanilla extract

1/2 cup chopped walnuts or pecans (optional)

Maple syrup and sliced bananas for serving

Instructions
 

Preheat your waffle iron according to the manufacturer's instructions.

    In a large mixing bowl, combine the mashed bananas, brown sugar, eggs, milk, vegetable oil, and vanilla extract. Whisk until smooth.

      In another bowl, mix the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon.

        Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to over-mix, as this can lead to tough waffles.

          If desired, fold in the chopped walnuts or pecans.

            Lightly grease the waffle iron with non-stick spray or brush with oil.

              Pour an appropriate amount of the batter onto the preheated waffle iron (usually about 1/2 to 3/4 cup, depending on the size of your waffle maker). Close the lid and cook until the waffles are golden brown and crisp, about 4-5 minutes.

                Carefully remove the waffles and keep warm in a low oven while you repeat with the remaining batter.

                  Serve warm topped with sliced bananas and a drizzle of maple syrup.
