3 ripe bananas, mashed

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup sour cream

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (optional, for consistency)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan or two 9-inch round cake pans.

    Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the mashed bananas and vanilla extract until well combined.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the sour cream, starting and finishing with the dry mix. Carefully fold until just combined; do not overmix.

          Bake the Cake: Pour the batter into the prepared cake pan(s) and smooth the top with a spatula. Bake in the preheated oven for 25–30 minutes (for round pans) or 35–40 minutes (for a 9x13 pan), or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

            Prepare the Frosting: In a medium bowl, beat the softened cream cheese and butter together until creamy and smooth. Gradually add the powdered sugar, mixing until well incorporated. Stir in the vanilla extract and add milk if needed for a smoother consistency.

              Frost the Cake: Once the cake layers are completely cool, generously spread the cream cheese frosting on the top of one layer, place the second layer on top (if using round pans), and frost the top and sides of the cake. If using a 9x13, simply spread the frosting on top.
