Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1 cup whole wheat flour

1/2 cup brown sugar

1/4 cup honey or maple syrup

1/2 cup Greek yogurt or applesauce

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon (optional)

1/2 cup nuts (e.g., walnuts or pecans), chopped (optional)

1/2 cup chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the wells with cooking spray.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, brown sugar, honey (or maple syrup), Greek yogurt (or applesauce), eggs, and vanilla extract. Mix until smooth and well incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, whole wheat flour, baking soda, baking powder, salt, and cinnamon (if using).

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Avoid overmixing.

Add Extras: If desired, fold in the chopped nuts and chocolate chips until evenly distributed throughout the batter.

Fill Muffin Tins: Spoon the batter evenly into the prepared muffin tin, filling each well about 3/4 full.

Bake: Bake the muffins in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy the muffins warm as a delicious breakfast treat or snack. They can also be stored in an airtight container for up to 3 days or frozen for up to a month.
