1 cup all-purpose flour

2 ripe bananas, mashed

1 tablespoon baking powder

1 tablespoon sugar (optional)

1/2 teaspoon salt

1 cup milk (dairy or non-dairy)

1 large egg

2 tablespoons melted butter (or coconut oil)

1 teaspoon vanilla extract

Optional toppings: sliced bananas, maple syrup, chopped nuts, or whipped cream

Instructions
 

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

    In a separate bowl, mash the ripe bananas until smooth. Add the milk, egg, melted butter, and vanilla extract to the mashed bananas, and whisk until fully incorporated.

      Pour the wet mixture into the dry ingredients, gently stirring until just combined. Be careful not to overmix; some lumps are fine.

        Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with a little butter or oil.

          Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface of the pancake, about 2-3 minutes.

            Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown.

              Repeat with the remaining batter, ensuring the skillet is greased as needed.
