6 cups of day-old brioche or challah bread, cubed

3 ripe bananas, sliced

4 large eggs

2 cups heavy cream

1 cup whole milk

1 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup dark rum

1/2 cup brown sugar

1/4 cup unsalted butter

1/2 cup pecans or walnuts, chopped (optional)

Vanilla ice cream (for serving)

Instructions
 

Prep the Bread: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cubed brioche or challah bread with the sliced bananas. Toss gently to mix and set aside.

    Make the Custard: In another bowl, whisk together the eggs, heavy cream, whole milk, granulated sugar, vanilla extract, cinnamon, and salt until well combined.

      Combine Mixtures: Pour the custard mixture over the bread and banana mixture. Gently stir to ensure the bread is fully soaked. Let it sit for about 15-20 minutes, allowing the bread to absorb the custard.

        Prepare Baking Dish: Grease a 9x13-inch baking dish with butter and pour the bread pudding mixture into the dish. Spread it out evenly.

          Prepare the Bananas Foster Sauce: In a saucepan, melt the unsalted butter over medium heat. Add the dark rum and brown sugar, stirring well to combine. Bring the mixture to a gentle simmer, letting it bubble for 3-4 minutes until thickened slightly. If using, stir in the chopped nuts.

            Add the Sauce: Drizzle the warm Bananas Foster sauce over the top of the bread pudding. Use a spatula to gently fold some of the sauce into the pudding to incorporate flavors.

              Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes or until the top is golden brown and a knife inserted in the center comes out clean.

                Serve: Let the bread pudding cool for about 10 minutes before serving. Serve warm with a scoop of vanilla ice cream and a drizzle of any leftover Bananas Foster sauce.
