1 lb (450g) boneless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

1 cup panko breadcrumbs

2 large eggs

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Vegetable oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp Sriracha (adjust to taste)

1 tsp lime juice

1 tsp honey

Pinch of salt

For Garnish:

Chopped green onions

Sesame seeds

Prepare the Chicken:

    - In a bowl, season the chicken pieces with garlic powder, onion powder, salt, and pepper.

      Set Up Breading Station:

        - Place the flour in one bowl, the eggs (whisked) in another bowl, and the panko breadcrumbs in a third bowl.

          Coat the Chicken:

            - Dip each piece of chicken into the flour, shaking off excess, then into the beaten eggs, and finally coat it in panko breadcrumbs for a crunchy texture.

              Fry the Chicken:

                - Heat vegetable oil in a deep skillet over medium-high heat. Once hot, carefully add the breaded chicken pieces in batches. Fry until golden brown and cooked through, approximately 4-5 minutes per side. Remove and place on a paper towel-lined plate to soak up excess oil.

                  Make the Bang Bang Sauce:

                    - In a bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, lime juice, honey, and a pinch of salt until smooth and well combined. Adjust the heat by adding more Sriracha if desired.

                      Combine and Serve:

                        - In a large mixing bowl, add the fried chicken pieces and pour over the Bang Bang sauce. Toss gently until all the chicken is well-coated.
