1 lb boneless, skinless chicken breasts

1 cup cornstarch

1 egg, beaten

1 cup Panko breadcrumbs

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

Vegetable oil for frying

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon honey

1 teaspoon sriracha (adjust to taste)

2 green onions, finely sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: Slice the chicken breasts into strips, about 1 inch wide.

    Set Up Breading Station: In one bowl, combine cornstarch with salt, pepper, garlic powder, and paprika. In a second bowl, place the beaten egg. In a third bowl, add the Panko breadcrumbs.

      Coat the Chicken: Dredge each chicken strip in the cornstarch mixture, shaking off excess. Then dip into the egg, allowing any excess to drip off, and finally coat with Panko breadcrumbs, pressing gently to adhere.

        Fry the Chicken: In a large skillet, heat about 1 inch of vegetable oil over medium heat. Once hot, carefully add the breaded chicken strips in batches. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

          Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, honey, and sriracha. Adjust the sriracha to your preferred spice level.

            Serve: Toss the fried chicken strips in the bang bang sauce until well coated, or serve the sauce on the side for dipping. Garnish with sliced green onions and sesame seeds before serving.
