Ingredients
  

1 lb fresh salmon fillet, skin removed and cut into bite-sized cubes

1 cup panko breadcrumbs

1/2 cup cornstarch

1 large egg

1 tbsp olive oil

Salt and pepper to taste

Green onions, chopped (for garnish)

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust according to spice preference)

1 tsp lime juice

1/2 tsp garlic powder

Instructions
 

Prepare the Salmon: In a bowl, season the salmon cubes with salt and pepper. Set aside.

    Breading Station: Set up a breading station with three bowls: one with cornstarch, one with a whisked egg, and one with panko breadcrumbs.

      Coat the Salmon: First, coat each salmon cube in cornstarch, shaking off the excess. Then, dip it into the beaten egg, allowing any excess to drip off, and finally coat it in panko breadcrumbs.

        Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly brush or spray the parchment with olive oil.

          Bake the Bites: Place the coated salmon bites on the prepared baking sheet, making sure they’re not crowded. Lightly spray or brush the tops with olive oil. Bake for 12-15 minutes, or until golden brown and flaky in the center.

            Make the Bang Bang Sauce: While the salmon bites are baking, mix together mayonnaise, sweet chili sauce, sriracha, lime juice, and garlic powder in a small bowl until well combined. Adjust seasoning or spiciness to your taste preference.

              Serve: Once the salmon bites are baked, remove them from the oven and let them cool slightly. Drizzle the Bang Bang sauce over the bites or serve it on the side for dipping. Garnish with chopped green onions.
