Ingredients
  

2 cups shredded cooked chicken

1/2 cup BBQ sauce (your choice of flavor)

4 slices of rustic bread (sourdough or whole grain)

1 cup shredded sharp cheddar cheese

1/2 cup shredded mozzarella cheese

2 tablespoons butter (room temperature)

Optional: sliced jalapeños for added heat

Fresh parsley for garnish

Instructions
 

In a medium bowl, combine the shredded chicken and BBQ sauce, mixing thoroughly to ensure the chicken is well-coated.

    Preheat a grill or skillet over medium heat.

      Take two slices of bread and spread butter on one side of each slice.

        Place one slice of bread butter-side down onto the hot grill or skillet. Layer on half of the cheddar and mozzarella cheeses, followed by an even layer of the BBQ chicken mixture. Optionally, add sliced jalapeños for a spicy kick.

          Top with the remaining cheese and finish with another slice of bread, butter-side up.

            Grill for about 4-5 minutes or until the bottom is golden and crispy. Carefully flip the sandwich and grill the other side for another 4-5 minutes, until the cheese is melted and the bread is crispy and golden brown.

              Remove from the grill and let it sit for a minute before slicing in half.

                Garnish with chopped fresh parsley if desired, and serve warm.
