Ingredients

2 medium sweet potatoes, peeled and diced

1 pound boneless, skinless chicken breasts

1 cup barbecue sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 avocado, diced

¼ cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Roast the Sweet Potatoes: Toss the diced sweet potatoes in a bowl with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway through, until they are tender and slightly caramelized.

Cook the Chicken: While the sweet potatoes are roasting, season the chicken breasts with salt and pepper. In a skillet over medium heat, add a drizzle of olive oil and cook the chicken for 5-7 minutes on each side or until the internal temperature reaches 165°F (75°C).

Add BBQ Sauce: Once the chicken is cooked, reduce the heat to low, and pour the barbecue sauce over the chicken. Allow it to simmer in the sauce for about 5 more minutes, turning occasionally to ensure it's evenly coated. Remove from heat and shred the chicken using two forks.

Combine Ingredients: In a large bowl or meal prep containers, layer the roasted sweet potatoes, shredded BBQ chicken, black beans, corn, and diced avocado.

Garnish and Serve: Top each bowl with fresh cilantro and serve with lime wedges on the side for a zesty finish. Enjoy your BBQ Chicken Sweet Potato Bowls warm!
