1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

1 cup fresh pineapple, cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 medium red onion, cut into 1-inch pieces

1/4 cup soy sauce

1/4 cup honey

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

Skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

In a bowl, whisk together soy sauce, honey, olive oil, minced garlic, ground ginger, smoked paprika, black pepper, and red pepper flakes to create the marinade.

    Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

      While the chicken marinates, prepare the vegetables and pineapple. Cut them into equal-sized pieces for even cooking.

        Preheat your grill to medium-high heat.

          Thread the marinated chicken, pineapple cubes, and pieces of bell pepper and onion onto skewers, alternating between each ingredient for color and flavor.

            Once the grill is hot, place the skewers on it. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

              Optional: Brush any remaining marinade on the skewers halfway through grilling for extra flavor.

                Once done, remove the skewers from the grill and let them rest for a few minutes.
