Beef and Rice Casserole

1 lb ground beef

1 cup uncooked brown rice

1 can (15 oz) diced tomatoes with green chilies

1 small onion, chopped

2 cloves garlic, minced

2 cups beef broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1 tablespoon Worcestershire sauce

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.

      Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes, until the onion is translucent.

        Stir in the diced tomatoes (with their juices), Worcestershire sauce, paprika, and cumin. Season with salt and pepper to taste.

          In a large mixing bowl, combine the uncooked brown rice, beef broth, and the mixed vegetables. Add the meat mixture from the skillet and stir to combine well.

            Transfer the entire mixture into a greased 9x13 inch casserole dish, spreading it evenly.

              Cover the dish with aluminum foil and bake for 45-50 minutes, or until the rice is tender and has absorbed most of the liquid.

                Remove the foil, sprinkle the shredded cheddar cheese evenly on top, and return to the oven uncovered for another 10-15 minutes until the cheese is melted and bubbly.

                  Once done, let it sit for about 5 minutes before serving. Garnish with fresh parsley.
