Beef Chimichangas

Ingredients
  

1 lb ground beef

1 cup onion, diced

2 cloves garlic, minced

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

4 large flour tortillas

Vegetable oil (for frying)

Optional toppings: sour cream, guacamole, salsa, lettuce, diced tomatoes, sliced jalapeños

Instructions
 

In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add the diced onion and minced garlic to the skillet with the beef, cooking until the onion becomes translucent, about 3-4 minutes.

      Stir in the black beans, corn, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until heated through. Remove from heat and let cool slightly.

        On a clean surface, lay out a flour tortilla and place about 1/2 cup of the beef mixture in the center. Sprinkle a tablespoon of shredded cheddar cheese on top.

          Fold in the sides of the tortilla and then roll it up from the bottom, keeping the filling secure. Repeat with the remaining tortillas.

            In a large frying pan, heat about 1 inch of vegetable oil over medium heat until hot. Carefully place the chimichangas seam-side down in the oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side.

              Once cooked, remove the chimichangas from the oil and drain on paper towels.

                Serve hot with your choice of toppings such as sour cream, guacamole, salsa, lettuce, diced tomatoes, and sliced jalapeños.
