Ingredients

For the Beef Filling:

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

2 tbsp fresh lime juice

Fresh cilantro, chopped (for garnish)

For the Cherry Slaw:

2 cups red cabbage, finely shredded

1 cup fresh cherries, pitted and halved

1 medium carrot, grated

1/4 cup plain Greek yogurt

2 tbsp apple cider vinegar

1 tbsp honey

Salt and pepper to taste

Optional: 1/4 cup slivered almonds for crunch

For Serving:

8 small corn or flour tortillas

Slices of avocado

Lime wedges

Instructions

Prepare the Cherry Slaw: In a large bowl, combine the shredded red cabbage, halved cherries, and grated carrot. In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss until well combined. Add slivered almonds if using, and set aside to let the flavors meld.

Cook the Beef: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Combine and Season: Increase the heat to medium-high and add the ground beef. Break it up with a spatula, cooking until browned, about 5-7 minutes. Drain any excess fat. Stir in chili powder, cumin, paprika, salt, pepper, and lime juice. Cook for an additional 2 minutes until spices are well-blended and fragrant.

Warm the Tortillas: While the beef is finishing, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

Assemble the Tacos: Take a warm tortilla and spoon a generous portion of the beef filling onto the center. Top with a scoop of cherry slaw, a few avocado slices, and a sprinkle of fresh cilantro.

Serve: Serve immediately with lime wedges on the side for an extra zing.
