Ingredients
  

1 French baguette or Italian ciabatta loaf

4 ripe Roma tomatoes, diced

1 clove of garlic, minced

1/4 cup fresh basil leaves, finely chopped

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

1/2 cup fresh mozzarella cheese, diced (optional)

Balsamic glaze for drizzling (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Slice the baguette or ciabatta into 1/2-inch thick slices. Arrange the slices on a baking sheet.

      Brush each slice with olive oil on one side. Toast in the oven for about 5-7 minutes, or until golden brown and crisp. Keep an eye on them to prevent burning!

        In a mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Stir gently to combine, ensuring the tomatoes are coated nicely.

          Once the bread is toasted, remove it from the oven and let it cool slightly. If you chose to use mozzarella, place a few pieces on each toast.

            Spoon the tomato mixture on top of each toasted slice, ensuring an even distribution.

              For an extra touch of flavor, drizzle with balsamic glaze just before serving.

                Serve immediately and enjoy the fresh burst of flavors!
