2 medium-sized apples (such as Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/4 tsp nutmeg (optional)

1/4 cup granulated sugar

1/3 cup buttermilk (or milk + 1 tsp lemon juice)

1 large egg

1 tsp vanilla extract

Oil for frying (vegetable or canola)

1/2 cup powdered sugar (for dusting)

Cinnamon Sugar Coating:

1/4 cup granulated sugar

1 tbsp ground cinnamon

Prepare the Coating: In a small bowl, combine the granulated sugar and ground cinnamon for the coating. Set aside.

    Make the Batter: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg (if using).
